This week, we sat down with Kristen Carli, a Registered Dietitian who specializes in Vegetarian Nutrition as well as Integrative and Functional Nutrition. Kristen provides evidence-based, personalized nutrition counseling and she is based in Scottsdale, Arizona.
What inspired you to become an Registered Dietitian?
“I was inspired to become an RD when I was an undergrad. I was always interested in healthy eating and the power of nutrition and decided that I really wanted to share that with others!”
When did you begin your plant-based nutrition journey?
“I began my plant-based nutrition journey about 10 years ago when my mom was transitioning to a plant-based diet. I was in college, and when I would come home, we would be eating vegan!”
What do you think is the most underrated part of a healthy diet?
“Most of us think of nutrition as solely a means to weight loss, but it involves so much more. Nutrition can be really powerful to prevent and fight chronic disease. That’s the area that I specialize in in my practice.”
What is your favorite plant-based nutrition “hack?”
“I work on a lot of blood-sugar maintenance in my practice. So, my favorite hack is making sure that your snacks are balanced. So that involves a source of fiber, protein, and healthy fats.”

What advice do you have for those looking to follow a plant-based lifestyle?
“My biggest piece of advice for those wanting to follow a plant-based diet is that you don’t have to go ‘all-in’ and be 100% vegan. I work with vegans and vegetarians in my practice, but I also work with people who are just dipping their toes into plant-based eating. Every little bit counts!”
Why is it important to get plenty of fruits and vegetables in your diet?
“Fruits and vegetables are so necessary. They pack in vitamins, minerals, fiber, and phytonutrients like antioxidants. They really pack the power that can fight disease.”
Who has been the most influential person in your passion in nutrition and dietetics?
“The most influential person in my passion for nutrition and dietetics is definitely Dr. Michael Greger. I have read his books, I am a big fan of his website NutritionFacts.org, as well as his videos. Check them out!”
